Paleo Quick and Easy – Crock Pot Roast

I often have a very hectic schedule. Being a mom, working a full time job and trying to get a new gym off the ground; doesn’t leave much room for leisure time. Needless to say I want to save as much time as I can when cooking for the family. Nobody wants to spend hours in the kitchen after a long day at work.

Here is one of many quick and easy Paleo Recipes.

 

Beef Bottom Roast with Peppers and Onions

Ingredients

  • 1 ½ – 2 pounds grass-fed beef bottom roast
  • 2 onions
  • 2 peppers (orange and yellow)
  • (Organic) chicken or vegetable broth

 

Seasoning  

  • Olive oil
  • Freshly ground pepper
  • Garlic powder
  • Dried basil

 

Coat the roast with olive oil. Season all sides of the roast with pepper, garlic powder and dried basil. Put the roast in your crock pot. Peel the onions and remove the seeds from the peppers. Cut the vegetables in large pieces and add to the pot. Fill the crock pot with chicken broth (halfway), cover and cook on high for 8 hours.

 

 

 

 

 

 

 

 

 

 

Be creative and  add other vegetables such as carrots, squash or broccoli. You can use the leftover meet in salads, on sandwiches or as a quick protein snack.
